new year's resolution, kind of not really

I don't usually make new year's resolutions. I think that if there's something you know you should, or want, to do, you should just do it!

Lately, I've been trying to take more (and better) photos with my phone. There are a lot of times when I don't carry my SLR or my prime lens isn't ideal, but why not use my phone? With a little help from the Camera+ app, this may be one "resolution" that I can stick with.

A few days ago I finally took my parents to one of my favourite finds of 2011, The Stockyards. They both had the porchetta sandwich with rapini while I tackled the fried chicken dinner. I'm not a fried chicken person, but you wouldn't know it watching me tear into this, juices dripping down my face, a wild look in my eyes. Oh yes.

This is my exam study schedule, aka my life for the next two weeks. I willingly admit that I am an organization addict. Highlighters, sticky notes, to-do lists... Be still, my colour-coded and alphabetized heart!

On another note, I started using my tumblr again little garcon!

I was in a really silly, hyper mood today... just before my midterm started, my friend and I had a hysterical laughing fit. I thought it was so weird but I probably should have enjoyed it. Let's just say I wasn't laughing after I finished (or rather, didn't finish...) my midterm...

Besides, a little silliness is always good, right?

We had our first snow today. Just a sprinkling, but still. I think these are now appropriate...

easy chicken marbella

Have you had Chicken Marbella? My mum has been making it since I was little, so when the weather gets gloomy and cold and I haven't been home in a while, there's nothing I want more than Chicken Marbella. The crispy chicken skin, tender veggies, and combination of sweet prunes with kalamata olives really cheer me up!

The original recipe is from the Silver Palate Cookbook, but this is my simplified, two serving version. You can see the original recipe here.

Easy Chicken Marbella
serves two
prep time: 30 min.
cooking time: 1 hour

2-3 chicken thighs
5 garlic cloves, smashed
1 squeeze of lemon juice
1 glug of balsamic vinegar
1 glug of olive oil
1 tbsp oregano
10 pitted prunes, halved
15 kalamata olives
salt and pepper to taste
1 small sweet potato
2 carrots
10 brussels sprouts

1) Add chicken, garlic, lemon juice, vinegar, olive oil, oregano, prunes, olives, and salt and pepper in a plastic bag. Mix and marinate. (Even just half an hour is good, though overnight is best!)
2) Peel and cut sweet potato and carrots into rolling wedges. Wash and halve brussels sprouts. Arrange vegetables in baking dish.
3) Arrange chicken and marinade on top of vegetables. Add enough water to almost cover the vegetables.
4) Bake at 350°F for approx. 1 hour or until chicken is browned and juices run clear.

I like to have Chicken Marbella with egg noodles and parmesan, or a crusty bread.
