カレー

OK today is Curry... sort of the same as Friday's curry but not as good (but you know nothing of Friday's so sort of beside the point).
Well ingredients are:
Whatever vegies you have in the fridge,
Minimum, a couple of spuds OR sweet potato
Chicken or Beef (pork should work but not done it yet) I mainly use chicken.
Spices... take your pick but get something "Curryish" I use 2 types of Marsala one seems to be nutmeg based (no idea where it came from just in the cupboard) and one I picked up from a middle eastern supermarket in Ueno which has a nice spice to it as well as some Cumin and chilly powder... actually tonight I used some Corriander as well.

OK so here we go:
melt 10 - 40g butter in saucepan, add a few cloves of Garlic and some basic herbs (I cheat and use a mixed herb bottle thing)
Cook the Chicken in the above until looks good.
Add the vegies
Add water until it just not quite covers everything, if you know what I mean.
My curry flavour goes a bit like this:
1 Cup warm water
Chicken OR beef stock, 1 - 2 cubes
Masala (2 types for me) x 2 teaspoons
Red Pepper( normal is Ok as well depending on how spicy you want it), shake or 4
Salt ( I use Krazy salt) shake or 2
Mixed Herbs , shake or 6
Flour 3 -4 heaped table spoons (optional but gets a nice thickness happening)
So dissolve the stock in the water.
add everything else except the flower and mix it up.
blend in the flour until you get a nice paste.

Add the paste to the saucepan.
Cover saucepan, cook on Mid-low flame for 10 - 15 mins.
Uncover and reduce on same flame until you get the consistency you are looking for.

New tyres

Got new tyers today... Yuki is not impressed but I think they are pretty cool.
Last tyres had a nail through them, were out of shape, 5 years old and hard and out of round.
New ones are Pirelli P6000's and i do notice the differance from the old ones even only going about 10K's... cost about AUD850 for the set.

Hello... Yuki made me make this page so I do not forget how to make the food I make.
She gets annoyed when I make nice things(most of the time if I do say so myself) and then i can not replicate them..... always a slightly different flavour.
Normally I just throw things together, maybe read a recipe find a base I like and modify it to either my energy level, (you want me to whip what for how long??!) or what ingredients I have.. margarine / butter / oil are the same in my book as long as you offset the missing flavour with something else..... (oil needs some cream or milky sorta thing to get a bit closer to butter, the reverse is a little harder but a bit of salt and a thickening agent should get you close enough. Bay, Basil, rosemary, Oregano are in the same group as long as the flavour level are the same.. and the list goes on).
So that is the Matthew cooking style.... usually works, sometimes average rarely boring, bland or bad.
